In a saucepan, heat the olive oil over medium heat. Add the chopped red onion, garlic, and red chilli. Sauté for 2-3 minutes until softened.
Add the diced mangoes, apple cider vinegar, honey, lime juice, ground ginger, salt, and pepper. Stir well to combine.
Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally, until the mangoes have softened and the chutney has thickened slightly.
Remove from heat and allow the chutney to cool to room temperature. For a smoother texture, you may blend it lightly.
Transfer to a serving bowl and refrigerate for at least 30 minutes before serving to let the flavours meld.
