These Sweet & Spicy Pineapple Halloumi Skewers are a tropical twist on your standard BBQ fare. Juicy chunks of caramelised pineapple meet the savoury richness of halloumi cheese, while strips of red pepper and red onion add crunch and colour.
In a small bowl, mix the sweet chilli sauce, honey, lime zest, lime juice, and soy sauce.
Thread halloumi, pineapple, red pepper, and red onion onto skewers, alternating ingredients for a colourful finish.
Brush generously with the glaze.
Preheat BBQ or grill to medium-high. Grill skewers for 8–10 minutes, turning regularly and basting with more glaze, until the halloumi is golden and the pineapple begins to caramelise.
Serve immediately, garnished with fresh coriander or extra lime wedges if desired.
