  • In a bowl, whisk together the soy sauce, honey, oyster sauce, sesame oil, garlic, ginger, rice vinegar, and chilli flakes. Reserve 2 tablespoons of the marinade for basting.
  • Add the chicken pieces to the bowl, tossing well to coat them evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  • Thread the marinated chicken onto the skewers, shaking off any excess marinade.
  • Preheat your grill or griddle pan to medium-high heat.
  • Grill the skewers for 4-5 minutes per side, basting with the reserved marinade during cooking, until the chicken is caramelized and cooked through (internal temperature should reach 75°C [165°F]).
  • Transfer the skewers to a plate, sprinkle with sesame seeds and sliced spring onions, and serve immediately.
