Equipment

  • wooden or metal skewers if using wooden skewers, soak them in water for at least 30 minutes

Ingredients

  • 900 g chicken thighs boneless
  • 60 ml olive oil extra virgin
  • 4 cloves garlic minced
  • 1 lemon zest and juiced
  • 1 chilli red
  • 2 tbsp peri-peri sauce
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • Make the Marinade: In a large bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, and chopped red chillies. Stir in the peri-peri sauce, salt, and pepper.
  • Marinate the Chicken: Add the chicken pieces to the bowl and toss until every piece is well coated. Cover with cling film and refrigerate for at least two hours, preferably overnight.
  • Preheat the Grill: Heat your grill to 200°C (400°F) and lightly oil the grates.
  • Skewer the Chicken: Thread the marinated chicken onto the skewers.
  • Grill the Skewers: Place the skewers on the preheated grill. Cook for 10-12 minutes, turning every few minutes until the chicken is evenly charred and cooked through (internal temperature should reach 75°C/165°F).
