  • Marinate the Chicken: In a large bowl, combine the extra virgin olive oil, harissa paste, lemon zest, lemon juice, minced garlic, ground cumin, salt, and pepper. Add the chicken pieces and toss until evenly coated. Cover with cling film and refrigerate for at least 2 hours, preferably overnight, so the chicken skewers absorb all the bold flavors.
  • Prepare the Yogurt Dip: In a separate bowl, mix the plain Greek yogurt with the grated cucumber, minced garlic, lemon juice, and chopped fresh mint. Season with salt and pepper, then refrigerate until ready to serve.
  • Preheat the Grill: Heat your grill to 200°C (400°F) and lightly oil the grates.
  • Skewer the Chicken: Thread the marinated chicken pieces onto the skewers, ensuring they are evenly distributed.
  • Grill the Chicken Skewers: Place the skewers on the preheated grill and cook for 10-12 minutes, turning every few minutes until the chicken is evenly charred and cooked through (internal temperature should reach 75°C [165°F]).
  • Rest and Serve: Remove the chicken skewers from the grill and let them rest for about 5 minutes. Serve the skewers hot with a generous side of the chilled yogurt dip.
