  • Rinse the rice under cold water until the water runs clear. This removes excess starch and ensures fluffy rice.
  • Heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
  • Stir in the rinsed rice and toast for about a minute to enhance its nutty flavour.
  • Pour in the chicken or vegetable stock, lemon juice, and lemon zest. Add salt, black pepper, oregano, and dill.
  • Bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until the rice is tender and has absorbed the liquid.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the fresh parsley and mint (if using).
