  • Prepare the Marinade: In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  • Marinate the Chicken: Add the chicken pieces to the bowl and toss until they are evenly coated. Cover with cling film and refrigerate for at least two hours, preferably overnight.
  • Make the Tzatziki Sauce: While the chicken is marinating, prepare the Tzatziki sauce. Squeeze out excess water from the grated cucumber using a clean towel or paper towels. In a bowl, mix the Greek yogurt with the grated cucumber, minced garlic, olive oil, lemon juice, chopped dill, salt, and pepper. Refrigerate until ready to serve.
  • Preheat the Grill: Heat your grill to 200°C (400°F) and lightly oil the grates.
  • Skewer the Chicken: Thread the marinated chicken onto the skewers.
  • Grill the Chicken Skewers: Place the skewers on the preheated grill and cook for 10-12 minutes, turning every few minutes until the chicken is evenly charred and cooked through (internal temperature should reach 75°C/165°F).
  • Rest and Serve: Remove the skewers from the grill and let them rest for about 5 minutes. Serve with a generous serving of Tzatziki sauce and your favorite sides.
