Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and lightly grease it with oil.
Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with parmesan, garlic powder, paprika, salt, and pepper.
Dip each piece of chicken into the flour, then the egg, and finally the panko mixture, pressing gently to coat. Thread onto skewers.
Place the skewers on the baking tray, drizzle with olive oil, and bake for 20–25 minutes, turning halfway through, until golden brown and crispy.
Garnish with fresh parsley and serve with lemon wedges.
