  • Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and lightly grease it with oil.
  • Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with parmesan, garlic powder, paprika, salt, and pepper.
  • Dip each piece of chicken into the flour, then the egg, and finally the panko mixture, pressing gently to coat. Thread onto skewers.
  • Place the skewers on the baking tray, drizzle with olive oil, and bake for 20–25 minutes, turning halfway through, until golden brown and crispy.
  • Garnish with fresh parsley and serve with lemon wedges.
