Sweet & Tangy Mango Chutney
Ingredients
- 2 Mango peeled and diced
- 1 Red Onion finely chopped
- 1 red chilli deseeded and finely chopped (adjust for heat)
- 1 clove garlic minced
- 60 ml apple cider vinegar
- 2 tbsp honey runny
- 1 lime juiced
- ½ tsp ginger ground
- ½ tsp salt
- ¼ tsp black pepper ground
- 1 tbsp olive oil extra virgin
Instructions
- In a saucepan, heat the olive oil over medium heat. Add the chopped red onion, garlic, and red chilli. Sauté for 2-3 minutes until softened.
- Add the diced mangoes, apple cider vinegar, honey, lime juice, ground ginger, salt, and pepper. Stir well to combine.
- Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally, until the mangoes have softened and the chutney has thickened slightly.
- Remove from heat and allow the chutney to cool to room temperature. For a smoother texture, you may blend it lightly.
