Ingredients
- 200 g rice basmati or jasmine
- 500 ml stock chicken or vegetable
- 1 tbsp olive oil extra virgin
- 1 onion small, finely chopped
- 2 cloves garlic minced
- 1 lemon juiced and zest
- ½ tsp salt
- ¼ tsp black pepper ground
- ½ tsp oregano dried
- ½ tsp dill dried
- 1 tbsp Fresh Parsley chopped
- 1 tbsp fresh mint chopped (optional)
Instructions
- Rinse the rice under cold water until the water runs clear. This removes excess starch and ensures fluffy rice.
- Heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
- Stir in the rinsed rice and toast for about a minute to enhance its nutty flavour.
- Pour in the chicken or vegetable stock, lemon juice, and lemon zest. Add salt, black pepper, oregano, and dill.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the fresh parsley and mint (if using).
