Few dishes walk the line between indulgent comfort food and thoughtful culinary composition quite like BBQ Pulled Pork Loaded Fries. At its heart, this is a dish rooted in backyard cookouts and casual cravings—but with a few refined techniques and well-balanced flavours, it transforms into something truly memorable. Think golden, crispy fries layered with tender pulled pork that’s been slow-cooked and generously coated in a sticky, smoky barbecue glaze. Add melty cheddar, fresh herbs, and the zing of pickled onions, and what you get is a plate built for sharing—but hard to part with.
Great pairings
This is the kind of dish that effortlessly bridges casual dinners and entertaining. It stands on its own, but it also plays beautifully alongside other mains—especially when you’re planning a mix-and-match menu. For instance, serve it with something bright and zesty like our Sticky Honey Soy Chicken Skewers, Asian Style to bring a sweet and savoury contrast, or add a spicy edge with our Spicy Peri-Peri Chicken Skewers with Lemon & Chilli. Both are flavourful pairings that complement the rich, smoky pork.
The success of this dish hinges on two things: perfectly crisp fries and deeply flavourful pulled pork. The fries are oven-baked until golden and lightly seasoned to balance the richness of the toppings. The pork, meanwhile, should be soft enough to fall apart with a fork and thoroughly infused with barbecue sauce—tangy, sweet, smoky, or spicy depending on your preference. From there, it’s all about layering: a little cheese for creaminess, a handful of fresh coriander to brighten things up, and the crunch and acidity of pickled onions to cut through the richness.
It’s rustic, satisfying, and impressive on the plate. And if you want to build out a full menu, consider pairing it with something herbaceous and grilled like our Juicy Grilled Chicken Skewers with Garlic & Herbs. Together, they create a balanced table of bold, dynamic flavours.
This is more than just a snack—it’s a showstopper, perfect for game nights, weekend feasts, or any time you’re craving something hearty with real depth of flavour. Save this recipe and add it to your list of go-to crowd-pleasers.

BBQ Pulled Pork Fries
Ingredients
For the fries
- 800 g fries home made
- 5 g salt flaking sea salt is the best
- black pepper ground, to taste
- 1 tbsp olive oil extra virgin
For the pulled pork
- 300 g pork shoulder cooked and shredded
- 120 ml bbq sauce
- 15 g butter
- 1 clove garlic minced
For the toppings
- 50 g Cheddar Cheese mature, grated
- 50 ml BBQ Sauce for drizzling
- 30 g pickled onions red
- 1 handful fresh coriander chopped
- 1 pinche smoked paprika
Instructions
- Preheat your oven to 220°C (fan 200°C). Spread the fries out on a large baking tray in a single layer. Drizzle lightly with olive oil and season with salt and black pepper. Bake for 20–25 minutes, or until golden and crisp, tossing once halfway through.
- While the fries are baking, melt the butter in a pan over medium heat. Add the garlic and sauté for about a minute until fragrant (skip this step if you prefer a cleaner BBQ flavour). Add the shredded pork and barbecue sauce, stirring to coat. Let it simmer for 5–7 minutes until the pork is heated through and sticky with sauce.
- Once the fries are crisp, transfer them to a serving dish or platter. Spoon the warm pulled pork generously over the top. Scatter over the grated cheddar while the pork is hot so it melts slightly.
- Drizzle with a little more barbecue sauce, then top with pickled red onions, chopped coriander, and a dusting of smoked paprika for colour and depth.
- Serve piping hot, either as a shareable centrepiece or as part of a larger spread. These loaded fries pair especially well with lighter, zingy grilled dishes to cut through the richness.
