Tomato Salad Ingredients
- 5 garlic cloves, thinly sliced
- 35g fresh ginger, peeled and julienned
- 135ml extra virgin olive oil
- 3-4 limes, finely grate the zest and then get 3 tbsp of lime juice
- 10g fresh coriander, roughly chopped
- 500g vine tomatoes, cut into slices
- 300g mixed cherry tomatoes, halved
- ½ red onion, sliced into thin rounds
- Flaked sea salt and black pepper
Instructions
- Put the garlic, ginger, oil, and ½ teaspoon of flaked sea salt into a small sauté pan. Place it on a medium to low heat and cook gently for 25 minutes, swirling the pan occasionally until the solids are lightly golden. Strain the oil through a sieve and set aside to cool for at least 10 minutes. Transfer the ginger and the garlic to a plate lined with kitchen towel to crisp up further.
- Use a fork to whisk the lime zest, lime juice, fish sauce, and coriander into the cooled ginger and garlic-infused olive oil until combined.
- Gently toss all the tomatoes together with 1 teaspoon of sea salt and a generous grind of pepper. Arrange the tomatoes and the red onion on a platter and spoon over the dressing. Finish it off by scattering the crispy ginger and garlic over the tomatoes. Serve the salad right away!
